---DETAILS--- Located in a small workshop under an archway in South London, Blenheim Forge is a jewel in Britain’s culinary landscape, beloved by chefs like Gordon Ramsey and Francis Mallmann. We collaborated on a collection of knives made with a core Japanese super blue carbon steel—known for its long-lasting durability and unparalleled sharpness—clad with rust-proof stainless steel until the edge of the blade for easier maintenance. It is notoriously difficult to forge super blue carbon steel, but Blenheim Forge has mastered it with their skill and attention to detail. Every knife has a comfortable, six-sided walnut handle that feels stable to hold and provides balance, attached with a beautiful copper ferrule. The wood is sustainably sourced from fallen trees in the M25 area by an enterprise that teaches joinery and furniture making to unemployed youth.
This 11.5cm knife is slightly larger than a standard paring knife, which makes it more versatile—you'll reach for it every day, whether to cut an avocado or mince garlic. (As with any Japanese-style knife, be careful to avoid strong, direct impact against bones and hard seeds, as that could cause the blade to chip.)
