De Buyer's Mineral B range of carbon steel pans are favourites in restaurant kitchens because they are intended for frequent and intense use, and only become better, and more stick-resistant, with time. (The pan will go from grey to black—the darker it is, the more non-stick.) Similar to cast iron, carbon steel is known for being indestructible, able to hold sky-high levels of heat that ensure your food sears and browns to perfection. The Mineral B Crêpe Pan strikes a perfect balance: It's easy enough to lift, but heavy-duty enough to reach the high heat that makes carbon steel so special. Pancakes develop beautiful, crisp edges in this pan—not just crêpes, but dosas, injera, spring onion pancakes, and more; it can also be used to sear vegetables. The pan is oven safe for up to 10 minutes at 200°C; a longer time or higher temperature may cause the handle to discolour. It is suitable for all hobs including induction.
