This solid wood gnocchi paddle, or rigagnocchi, from Marcato creates ridges on all types of gnocchi, garganelli and cavatelli, allowing sauce to cling to the pasta for excellent flavour. The robust ridges are thin and tight, creating more recesses in the pasta (for more sauce) while also making it quick and easy to shape pasta. Light pressure is all that’s required to scrape pasta off the board. The integrated handle allows for a tighter, more secure grip. Use the paddle to guide gnocchi along the board and roll garganelli. To clean, do not use water and soap; a cloth and brush will remove flour easily once it has dried.
